kitchen escapades

I read a few blogs that post what they eat weekly and I always really enjoy the posts.  I thought that I would give it a try.  I was posting the image from Pinterest, but I wanted to try photographing our food myself so that it would give a more cohesive look to the blog.  Now folks, keep in mind that I'm not exactly Pioneer Woman when it comes to food photography.  And now that it gets dark early, light in our apartment is not exactly easy to come by.  So I apologize for the less than stellar quality of these pictures.  I've linked directly to the recipe (where applicable) in the title.

Cheesy Chicken and Rice

This stuff is delicious.  It's also really easy, which is always a plus.  I found the recipe on Pinterest and we've had it twice, and Brian is now officially on board.  It would probably be better for you if you used fat free cream of chicken soup, but... I can't endorse that because I haven't tried it.

We've eat these a lot.  We make the fajitas using the dry Taco Bell fajita mix, which is our fave.  I follow the directions except I usually use half of two different color peppers (in this case red and yellow) instead of one whole green pepper.  Then you can top it with whatever you want!  I like cheddar cheese, Texas Pete, salsa, and light sour cream.  We also started making these corn muffins (also a Pinterest find) which are awesome.  The only thing that I change from the directions is that I just mix everything together.  No need for two bowls and not stirring too much and all that nonsense.  I hate getting more dishes dirty than necessary.

Spaghetti and Caesar Salad
I don't really have a recipe to go with this one.  Brian's family is big into their spaghetti sauce, and Brian's mom generously gave us a few bags to freeze the last time we were home.  It is so nice to be able to just make pasta, defrost a bag, and instantly have a delicious meal ready to go!

Crockpot Asian Chicken
I made this one up, using ingredients that we had on hand.  I was going to share the recipe and everything, but this really wasn't that good.  And when I'm assuming you guys aren't going to want to make something that's not that great.  I think it needed something sweeter in it, like in this recipe, but the soy sauce just made it too salty and while I'm usually all about slow cooking everything, the chicken slow cooked in soy sauce just wasn't that wonderful.  I'll keep looking.
