2011 in Review

Hi everyone!  It's been a big year.  I had entirely too much fun putting this post together.  I hope you have fun reading it, too, since I know many of you have only started following along in the last couple of months!  Enjoy!

My college roommates threw me a surprise bridal shower.  I also discovered Pinterest, and let's face it, it changed my life.

I sprained my ankle in a big way, which ruined my plans of running a 10-Miler in the spring (maybe this year?)


I went home for spring break and made some serious headway on wedding planning.  I decided to design my own invitations and later taught myself how to do calligraphy.




graduated from college.  Period.


June was kind of a big month.  My mom and I went to the beach, my aunts and my grandma threw me a bridal shower, I saw U2 again, and we picked out our wedding flowers.

July

Crunch time!  We had a fun 4th of July, my MOH threw a neighborhood bridal shower, and I wrapped up my job as a swim coach.


Brian and I got married and went on our honeymoon.  My dad also celebrated the big 5-0.


Brian and  I got settled in our new apartment and Stripes and Polka Dots marked it's 2 year anniversary.  My blog grew a lot this month as I finally understood what it meant to reach out to other bloggers.


I celebrated my 23rd birthday and got my camera.  We also had a fun and easy Halloween costume.


I launched Katelyn Brooke Designs and Sketch and Wash.  I also hosted Wedding Week and we celebrated Thanksgiving with our families.


We successfully celebrated our first Christmas as a married couple.  It was wonderful.

Scenes from Christmas 2011


I took a ton of pictures on Christmas Eve and I couldn't let the new year roll in without sharing just a handful.    As usual, I took too many pictures of things and rooms and far too few of people.  I need to work on that.  A goal for 2012, perhaps?

My mom hosted Christmas Eve this year and we had a full house.  I think we counted over 25 people.  My mom set three beautiful tables and we had a ton of delicious food.  It felt special.

I hope you had a wonderful holiday and are getting excited to ring in the new year!

I have been terrible about watching TV this year.  But the one that Brian and I consistently watch when it comes on is Parks and Rec, so I'm going to go with it!



(Honorable mention goes to Cheers which Brian and I have watched a lot on Netflix.  We started this summer and we're already on season 6!)

3. Song

I have been pretty obsessed with Florence and the Machine this year.  "Shake it Out" was my favorite from the Ceremonials CD that came out this year.

5. Christmas present

I got so many wonderful things this year, so I'm going to go with the one that I wasn't expecting.  My Christmas list for my parents was really vague this year, which was awesome because I got to be totally surprised.  My mom found me this pair of black Aigner boots, and I LOVE them!  They are so pretty.

Merry Christmas


I've always felt that there is something magical about Christmas Eve.  Perhaps it's the anticipation, or the fact that Christmas is just more sparkly at night.  We don't have a set tradition that we do every year, but this year my mom is hosting a big family gathering at our house.  I'm feeling especially grateful for all that I have tonight.

Wishing all of you a magical holiday filled with peace and love.  Truly.

because it's friday


I've completely lost track of the days, have you?  I know it's the 23rd.  But it feels weird that it's a Friday.  It seems like all days are just counting down to Christmas.

Last night I grabbed my camera and Brian and I were off to take some pictures of Christmas lights at night.  As I stepped out the door, I remembered that it was raining.  We decided to drive by anyway.

Sometimes things don't always go as you planned, but something good comes of it anyway.  I thought this picture was cool, even though I'm pretty sure that it's just a house light filtering through the raindrops on the window.

I hope that good things come out of these next few days for you.  Expected or unexpected.

christmas cookies

Oh hey guys.  I'm still here.  I've been livin' la vida Christmas at home... shopping, baking, and general craziness.

I wanted to pop by this morning to say "hola" and show you these cookies.


My mom made these spritz cookies using the Betty Crocker recipe (with ALMOND!) and they are divine.  They are the first thing I want to eat when I wake up and the last thing I want to eat before I go to sleep.  I like them so much that my mom has had to hide them so that there will be some left to eat when my family comes over on Christmas Eve.  Don't worry, it's for the best.

My mom has the Pampered Chef cookie press, which apparently is really cool, but I have to admit that I had no part in in the making of these cookies.  Just the eating.  I think that then they are dipped in white frosting and topped with sparkly clear sprinkles.  Perfection.

Also, I have to throw in a shout out to Picnik in the making of this post.  My parents don't have a photo editing software, so I searched free photo editing and I was done in minutes!  Sooo easy!

our first christmas


Brian and I decided on Saturday that we would do our mini-Christmas on Sunday so that we could leave on Monday!  We had such a fun day.  We got up and opened our stockings and presents, and then Brian made a us a HUGE breakfast.  Waffles and eggs and bacon... yum!  We just kinda hung out all day and then for dinner we went on a little date to our favorite Chinese buffet and came home and watched Love Actually.  It was perfect.

I thought I would share these photos of when we put up our little tree.  I've been calling it our Charlie Brown tree because it's so little.  We bought a strand of lights and put on our ornaments that our families sent with us.  It's been so much fun having a little tree, it makes me excited to have a big one of our own some day!

Posting around here is going to be a little sparse since we are out of town.

I'm planning on widening my blog when we get back, so in the meantime some of these pictures may be a little cut off.  Click to see them full size!

winter


I know that technically we have a few days left of fall, but after some unseasonable warmth it really feels like winter is officially here.

I've been saving most of my prettier pictures for Sketch and Wash, but for some reason I can't stop taking these photos from our balcony (oh wait... I think it's because it's 3 steps from my computer.)  Anyway, now that I've taken so many I feel compelled to post them on here to show the changing of the seasons.  See previous posts here, here, and here.  And in case you're interested, those pumpkins still live on the balcony.  Fail.

what a week.

I won't be sad to wave a cheerful g'bye to this week, my friends.  Too much to do and too little time.  Also, somehow it seemed like all the things about being a grown-up that I have been blissfully avoiding decided to hit the fan of life.  Student loans, insurance companies, switching doctors... let me just say that being a grown-up sucks.  Today alone featured an unexpected half day of work (resulting in a ten minute lunch break where I inhaled some leftover pizza), failed trips to the DMV and the pharmacy, and horrendous cold and rainy weather.   That last one just made everything worse.



Tomorrow is Brian's final final (hooray!)  On Tuesday we head north for an undetermined length of time to spend the holidays with our families and friends.  I've been trying to wrap everything up before we leave, because I don't take my files with me.  We'll see.  On Monday Brian and I are planning on having "mini Christmas," which hopefully doesn't wind up being way lamer than we initially intended.  I'll keep you posted.

What's lifting your spirits this week, friends?  I came back from Thanksgiving break so excited for the holidays but I feel like this last week or so has kind of crushed my Christmas spirit.  What's putting you in the mood for a festive weekend?

Christmas Card 2011

Christmas cards are one of my favorite things about the Christmas season (duh, I LOVE mail!)  I knew that as soon as Brian and I got married, Christmas cards would be forthcoming.  Designing them this year was easy.  I just used one of our wedding pictures, and added the text I wanted.  I was going for simple and classic.



I designed them myself and then had them printed at Vistaprint.  I've ordered things from there before and I like it a lot.  It's so easy and the quality is pretty good.  But you just can't beat the price!  They have such good deals.  I was really pleased with how they turned out.

I waited to post these so that most people would have gotten them (except for my love Julie in Macedonia!) Law school friends got kinda screwed in the Christmas card mailing, so if that's you holler at me and I will give you one!

kitchen escapades vol. 4

I only have two recipes this week, but they are good ones!


I'd seen Bubble Up Enchiladas on Pinterest (I mean really, what recipes don't I find there?) and I'd been wanting to give them a try.  Partly because they looked delicious, and partly because it is a Weight Watchers recipe.  They were really good!  But I have to admit that I pretty much got rid of everything that made them healthy.  The recipe calls for reduced fat biscuits, low fat cheese, and lean ground turkey.  I only got one of the three.  I couldn't find the cheese in low fat... apparently low fat cheese just isn't in the cards for the Wal-Mart in Lexington!  I'll talk more about the biscuits at the end.


I made a salad with ranch dressing and red peppers as a side.  I love the ranch and Mexican food combo!


As you can see, I added corn to mine, which was a recommendation on the recipe itself.  I highly recommend it- I love corn!  I also felt like sauteing and onion before cooking the turkey would be a good addition.

The other thing I would do is cut the biscuits up into smaller pieces.  I think I just don't really love refrigerator biscuits.  I think they're a good idea, but in practice I just don't like them that much.  Also, I wish that when recipes called for them, they would tell you the exact kind to buy.  Ounces would be nice.  I get there and there are a million different kinds: bigger, smaller, grands, buttery... I never know what to get!  As you can see, I went with a smaller can that supposedly is more natural or something.  It had less calories total than the only package of reduced fat, which was a bigger can.  I would get what I got again because the chunks of biscuit aren't my favorite anyway.

Chicken Pot Pie Mac
This was a slam dunk.  It was DELICIOUS, I had everything in my apartment already, and I kinda made it up from meshing two recipes together.  I'm gonna call that a win.

A few weeks ago I tried the Cheesy Chicken Pot Pie from IGE.  It had all of the right elements, but no matter what I did, I could not get the biscuits to cook through, resulting in RAW DOUGH chunks that had to be removed.  Gross.  See above gripe with refrigerator biscuits.  I wanted it to work so badly that I even tried it twice but I just couldn't get the biscuits to bake all the way through.

But the sauce haunted me.  It was SO good!  I thought that maybe it would be good on pasta; it was a cheese sauce after all!  So I basically followed the recipe with what I had at home, and sprinkled some bread crumbs on top from when I had made Baked Broccoli Mac and Cheese from Skinnytaste.  You can read my fully modified recipe under the pictures.


Ingredients:
  • 2 giant chicken breasts (or an equivalent amount of chicken)
  • 1/2 pound/ box of pasta (I used Cellentani, made by Barilla.  This is my favorite shape for cheese sauce!)
  • 2 tablespoons butter
  • 2 tablespoons flour
  • 1 tablespoon dehydrated onion
  • 2 cups frozen mixed vegetables
  • 1 cup chicken broth (the mostly fat free kind)
  • 1 cup skim milk
  • 3/4 cup grated cheese (I had 1/2 cup cheddar and 1/4 Colby and Monterrey Jack mix, or you could use 4 oz. Velveeta like the IGE recipe calls for!)
  • Bread crumbs (less than 1/2 cup)
  1. Preheat the oven to 350 degrees.
  2. Cook the chicken.  I baked mine in the oven with salt and pepper, but you can really cook it however you want, you're going to be cutting it into chunks or shredding it and baking it in the pasta later.
  3. Cook the pasta according to the directions.
  4. While those are cooking, start the sauce.  Melt the butter in a large saucepan and stir in the flour, allowing it to cook for about 30 seconds to get rid of the flour taste.
  5. Slowly mix in the milk and chicken broth, whisking to get rid of lumps.  I poured mine in 3 or 4 batches.  Add onion and cook on medium heat until sauce is thick and bubbly, around 5 to 10 minutes depending on how hot the stove is.  I measured the vegetables while the sauce cooked to let them sit out a little.  Just don't forget to stir!
  6. Remove from heat and add cheese.  Stir in cheese until melted.
  7. Add pasta, vegetables, and chicken.  I like to shred the chicken with two forks, but you could cut it into chunks as well.
  8. Transfer to a greased baking dish.  Sprinkle breadcrumbs on top in a thin, even layer.
  9. Spray top of breadcrumbs lightly with cooking spray and bake for 15-20 minutes, or until the sauce is bubbling.
That's it!  I served ours with a salad with Ken's Light Honey Mustard, my favorite!

laundry

Hope everyone had a good weekend!  Mine was busy, productive, and fun!  I worked on installing two blogs (check out Katelyn Brooke Designs this week to read more about them!) and yesterday I went shopping in Charlottesville.

Moving on to more exciting issues, our washing machine and dryer has been broken for a couple of weeks, and our new ones are finally being installed tomorrow! (I know, you're dying from anticipation!)  But seriously, I've always thought new household appliances were exciting.  And even though our laundry room is a creepy hole in the wall, are a few pictures of beautiful laundry rooms to get me in the mood for the MOUNTAIN of laundry that is waiting for me after these babies are hooked up.  Enjoy!
